INGREDIENTS
- 2.5 cups cooked quinoa
- 2 tsp. grape seed oil can use other oil if you do not have grape seed oil
- 1 cup almond milk
- 4 eggs
- 1 tbs. honey
- 1.5 cup blueberries
- 1 tsp. salt
INSTRUCTIONS
- In a blender, mix milk, eggs, honey, quinoa and oil together
- Once smooth add salt and baking powder and blend for a few seconds
- Preheat griddle and spray with cooking spray
- Pour ¼ cup batter on the griddle
- Sprinkle blueberries over the batter and cook
- Once there are bubbles, flip and cook the other side
- Pancakes are done when golden brown
